In my opinion the most underplayed and most flavorful addition to almost any dish is caramelized onions. BOOM. There, I said it...the cats out of the bag now. You're welcome.
how to make;
(1) 3lb bag +/- onions - sweet, yellow, vidalia, any will do
(they shrink a lot and last a while in the fridge so I always suggest you do as much as those teary eyes will allow for. *tip - for convince I will sometimes purchase pre-cut onions so I can save my mascara)
1 stick of butter
EVOO 1/4 cup
Sugar 1- 2 tablespoons
Place chopped onions in a sauté pan with butter, 1/4 cup of evoo and sprinkle 1 tablespoon of sugar on top, mix so onions are well coated and cover on medium/low heat till onions are soft. Turn up the heat to medium/high and toss until brown. Toss on any dish from breakfast eggs to steaks.Keeps well in fridge and reheats in seconds.
Enjoy!
